Order a martini for the first time at your favorite bar or restaurant, and you will be confronted with a series of questions like "on the rocks or straight up," "wet or dry, "olive or twist," and, perhaps, the most famous of all, "shaken or stirred? However, the first question you're likely to get is "gin or vodka." That's because these two colorless spirits have, historically -indeed by default- been the base of what many considered to be the king of cocktails. So, naturally, to challenge the norms, I went in search of a healthier alternative. After months of research, I landed on shochu.

,

A not-so-distant cousin of sake, shochu is as popular in Japan as vodka is in Russia, or gin in the US. Like gin and vodka, shochu is a clear, distilled spirit. Unlike either, shochu is effervescent. It has a creamy mouthfeel and a complex flavor profile, reminiscent of gin without the sting. Shochu is also sugar-free, gluten-free, carb-free and, lower in calories and alcohol by volume. That means you can enjoy shochu without getting the big head the morning after.

Here's the thing though. While the mugi (distilled from barley) shochu, used in this recipe, is not quite as aromatic and, not at all as herbaceous as gin, it makes for the perfect substitute in this recipe. Likewise, the kome-jochu (distilled from rice) lemongrass shochu is an able, light-bodied, albeit infinitely more flavorful, stand-in for vodka. Moreover, they both present a clean canvas for the spicy earthiness of Salubre's Adapt2It Superfood Soothie Blend and the light, sweet floral notes of the honey. The result can only be described as golden.

ENJOY!!!

Strain the mixture, evenly, between the two chilled martini glasses. Add ice prior to straining, if serving on the rocks. Garnish with lemon twist and a sprig of rosemary.
