After all, to make really creamy mayonnaise, you gotta have some eggs, right? Enter cashews! Cashews have a buttery, mildly sweet flavor and rich texture. They are versatile and lower in fat than, let's say, almonds. They are an excellent source of protein and heart-healthy monounsaturated and polyunsaturated fatty acids. Cashews even contain vitamin C. Taste this cashew mayonnaise you'll agree they are also the perfect substitute for eggs.
Cashew Mayonnaise Recipe

Ingredients:
1 cup cashews, soaked for 8-12 hours
1/4 cup freshly squeezed lemon juice
1/4 cup extra virgin olive oil
1/4 cup filtered water
1 teaspoon onion powder
1/2 teaspoon garlic powder
3/4 teaspoons Himalayan Sea salt
Preparation
Step 1
Rinse cashews thoroughly and soak in filtered water for 8 hours or overnight.
Step2
After soaking, thoroughly rinse the cashews again.
Step 3
Add the cashews and the remaining ingredients to a high-speed blender and blend until the mixture achieves the consistency of conventional mayonnaise, 2-3 minutes.
